Good slow cooker meal for a snowy day

Ok, Snowmageddon did it’s job yesterday and we had a snow day!!! Yay! It was my first one in twelve years! It was AWESOME! Once I found out that Notre Dame was definitely closed, I started gathering up my ingredients for a slow cooker meal. I went with Spicy Pork Chops.  🙂 The ingredients sounded a bit weird to me, but don’t be fooled. It’s awesome! You should give it a try on a snowy day sometime.

Spicy Pork Chops

5-6 center-cut loin pork chops
3 Tbsp. Oil
1 onion, sliced
1 green pepper, cut in strips
8 oz. can tomato sauce (I didn’t have this so I blended up a can of diced tomatoes and added some water to it)
3-4 Tbsp. brown sugar
1 Tbsp. vinegar
1 1/2 tsp. salt
1-2 tsp. Worcestershire sauce

1. Brown chops in oil in a skillet. Transfer to slow cooker.

2. Add all remaining ingredients to slow cooker.

3. Cover. Cook on Low for 6-8 hours.

4. Serve over rice.

YUM!!!!  I only made three pork chops and I cooked it for 6 hours.  They fell right off the bone.  I will definitely be making this one again!
